Ellie’s Signature Fish Pie

When I visited my sister in Bristol last weekend her housemate made an amazing fish pie! This is my attempt to recreate it based on the conversation I had with her briefly in their kitchen. It turned out really yummy. I recommend giving it a go.

Serves 2

Topping: ♥ Sweet potato (8-10 oz) ♥ Maris Piper potatoes (8-10 oz) ♥ Knob of butter ♥  Salt & Pepper ♥

Filling: ♥  Frozen white fish (10 oz) ♥ Prawns (3 oz) ♥ Peas (4 oz) ♥ Milk (0.5 pint) ♥ Flour (0.75 oz) ♥ Butter (0.75 oz) ♥  Paprika (a couple of pinches) ♥ Medium / mature cheddar (3 oz) ♥  Whole grain mustard (1 rounded tsp) ♥ Salt & pepper ♥

The recipe:

Peel and chop the potato. Boil until soft. Mash the potato with the butter, salt and pepper. Meanwhile, defrost the frozen fish by simmering in boiling water for about five minutes.

To make the sauce, put the milk, flour, butter and paprika into a pan. Heat to a very gentle simmer stirring with a balloon whisk. Continue at a gentle simmer stirring all the time, for five minutes until thickened. Take off the heat and stir in the melted cheese until it melts. Stir in the mustard, salt & pepper.

Put the sauce into a small oven proof dish. Flake the fish into the sauce, and add the peas and prawns. Cover with the mashed potato. Bake for half an hour at Gas Mark 5 / 190 C / 170 C fan.
